Creamy garlic pasta is an indulgent option for the person who doesn’t want to skimp and wants a meal that tastes like it could be prepared by a high-end restaurant. It’s made with a mild creamy sauce that can be made in less than five minutes. It’s a simple dish but when it comes down to it, those few minutes are all the difference between having a decent meal and one that’s forgettable.

How to make a good creamy garlic pasta sauce

Ingredients

  • Your choice of pasta (or another pasta dish).
  • Milk.
  • Creamed garlic.
  • Salt and pepper.

I don’t use an exact amount. The recipe is to be adjusted according to taste and the type of pasta. A fettuccine will take more cream; a penne longa would take less. Making the sauce with cream, not just milk, results in a sauce that’s thicker than what’s made with milk alone.

A favorite for those in the culinary arts. It’s not cooked but just mixed in with the rest of the ingredients. It’s made by sauteing a small amount of butter or oil in a pan, then adding crushed garlic and cooking it until it becomes brown and fragrant. The smell alone is enough to turn anyone off. If you don’t have the time or patience to make your own, find the pre-made stuff in the supermarket.

The Creamed garlic here is made from scratch so it’s not as fragrant as the pre-made stuff but flavor-wise, it’s basically identical and makes a great addition to this dish.

  • According to package directions, pasta needs to be cooked.
  • Drain pasta and set aside.
  • In a small pan, make a roux (pronounced “roo”) by combining the butter and flour until it becomes a creamy mixture, then add milk slowly while stirring until you have a thin sauce consistency.
  • Now comes the fun part. It doesn’t matter if you’re adding salt or pepper here since all the flavor that you could want already lies in the cream and garlic, so just throw in whatever flavoring you prefer and combine it with the sauce mixture before pouring it over your cooked pasta.
  • Serve with some freshly grated Parmesan cheese on top of that goes well with creamy garlic pasta.

Cooking notes for creamy garlic pasta

  • You can add more cream cheese or cream to the sauce if you want the dish to be thicker or thinner.
  • Depending on your preferred consistency, whether you want it on the thick side or the thin side, you might tone down the amount of butter used in preparing the creamed garlic.
  • If you’re using leftover chicken, keep in mind that it will take longer to cook compared to fresh chicken and so when adding it into your pasta mix, make sure that the chicken is already cooked through before adding it as it might overcook when added later on.
  • If you’re making your own cream at home, make sure to use unsalted butter as it gives the most flavor.
  • If you’re using pre-made cream and/or creamed garlic, don’t forget to add salt and pepper to your sauce!

Hahahaha. No, this recipe is somewhat simple.  If you have experience with making pasta sauces before though, then there is no problem making this dish. There’s a lot of explanation in the post above but if you still don’t get it, leave a comment and I’ll explain everything again or teach you something else instead!

Is this dish big enough for how many people?

It depends on how big your appetite is/how many people you’re having this for. For 2 servings, I usually use about 5-6 oz of pasta per serving (4 oz if the bowl is very heavy). But like I said, if you’re not that hungry, then you can always put less pasta or use just a regular bowl.

What kind of pasta are best for creamy garlic pasta?

Ronzoni is the most popular brand so far when it comes to making creamy garlic pasta recipes. In my opinion, though, any kind of pasta that’s not too thick or too heavy can be used. If you don’t want to buy 2 separate brands for this dish, feel free to buy whatever brand of pasta is available in your area. You can also substitute other types of noodles such as fettuccine and angel hair instead (just avoid using Asian noodles like mee hoon though).
