- Add a teaspoon of kosher salt (optional).

- Three dried shiitake mushrooms soaked overnight.
- 1 tbsp honey or brown sugar (optional).

- Heat the oven to 350 degrees.
- In a large non-stick skillet, you can also use a dutch oven if you want, heat up your oil on high until it’s hot but not smoking (about 3 minutes). Place the pork in the skillet and lightly brown on each side.
- Turn off the stove and place the pan into your preheated oven to bake for about 20 minutes or until an instant-read thermometer reads 160 degrees F in the center of a tender piece of pork.
- Remove pan from oven and cover with a lid to keep the pork warm while you make your mushroom sauce.
- The grease should be poured out of the pan. Then wipe down the bottom with a paper towel, so you can deglaze it with one cup of water. Add this liquid to a pot and on low heat simmer it for 5 minutes or until it becomes thick and syrupy like maple syrup.
- Add the mushrooms and reduce to low heat for 5 minutes or until the sauce thickens even more.
- Slice the pork into pieces and serve with the mushroom sauce over rice or alongside a vegetable dish.
For the marinade: In a small bowl, combine all the ingredients except the pork and mix really well with a whisk until smooth. Pour the marinade into a freezer bag or casserole dish. Add your pork ribs to the bag or dish and mix around to coat completely with the marinade.

- 3/4 cup (about 100 g) evaporated milk, 2% fat (divided).
- 1/2 cup of teriyaki sauce (Whole Foods has a good teriyaki sauce. No need to use bottled sauce.)
- 1 teaspoon soy sauce (The soy sauce Whole Foods has is good. You can also find it in the Asian section of your grocery store.).

- Cook for 2 minutes on each side. Stovetop Cooking technique. We aren’t going to grill this beautiful meat because we would lose some of the natural juices. Grilled meat tends to get tough if you overcook it, so don’t grill it.
- Spray slow cooker lightly with non-stick cooking spray. (This will simplify cleanup. The meat won’t stick to the slow cooker.)
- Mix evaporated milk, 1/2 cup teriyaki sauce (Whole Foods has a good brand), and soy sauce.
- Add pork loin and mix gently. You want to make sure all sides of the meat are covered. If there are little holes in the coating, that’s fine. The meat will get even more delicious after it marinates while you make the rice and stir-fry the vegetables.
- Pour mixture over the pork loin in the slow cooker.
- Cook on HIGH for 4 hours. When done, stand one end of it up, and use a knife to check for doneness. If it’s not done yet, turn to low and cook another hour or so.
- Let sit at room temperature for about 30 minutes before serving with extra sauce on the side. You can serve the meat at room temp or warm it up if you are eating it right away.
