  • To make the sauce: add all the ingredients into a pot except the cream, bring it to boil, and then simmer until reduced by half.
  • If you want to omit the idea of making your own sauce just use some white wine in the cream and stir well as you heat it up.
  • To make topping: Chop chives and garlic very finely (a couple of seconds in a food processor). Also, you can add sour cream, chopped parsley or chives, or any other herb that would go well with salmon.
  • For seasoning, you can add salt before you put the salmon in the oven or wait to season it at the end after cooking.
